Innovative restaurant kitchen approved

The Planning Commission reviews new commercial construction, and William Reed asked approval at the April 23 meeting for a restaurant at 118 E. Van Buren Ave. He plans to use a food truck as a kitchen and enclose it in a building. The food truck has three sinks, two refrigerators, and a freezer. It also has a fire suppression system and a grease trap. Reed said when the city first discussed allowing food trucks, he asked about increasing the number of permits and was told he could operate as a fixed business.

Reed said the exterior of the building would look similar to the adjacent building, and he will resurface the parking lot. His application was approved.
